I'll take small, scattered "greenhouses", made on the spot, using plastic sheeting. Dig down to conceal them, make each one only big enough to grow a few day's worth of sprouts, mushrooms at a time. Locate each one at the top of a hill, in the center of a thicket, and they will be most unlikely to be found. Naturally, one also has to bury a year's supply of grain, legumes, jerky, etc, and resort to the sprout growing only after nearly everyone is dead (ie, a year or so after shtf).
